Taste the difference of ethically raised, sustainable lamb

We stand by our Horned Dorset Sheep, considered an heirloom and endangered breed of sheep. For over five generations, we have sheperded and tended to our beautiful flock of sheep known for their wool and meat. Our sheep are part of our family. We respect them, we appreciate them and we love them. Our sheep are 100% grass fed. That means no corn, no soy, no grains, just grass grown onsight. They graze on our organically tended pastures full time. We are fortunate here in the Laguna de Santa Rosa region to be able to irrigate our pastures with the Santa Rosa Reclaimed Wastewater which allows us to have green grass year round.

Our dorset sheep are hardy and provide the best wool for bedding and their meat is light and not gamey. Our sheep never leave the ranch and are not traumatized by getting into a trailer and going off to a meat processor. They are harvested with a prayer in a quiet atmosphere and taken to Willowside Meats just a mile or so down the road. We utilize all parts. The sheep we do harvest are the ones who we have determined will not make a good breeding animal for the flock whether it is their horns are not strong enough or their wool is not to the standard that we strive for.

Because they are 100% grass fed and live a peaceful life, their meat is rich in flavor and has a tender and soft meat that is not gamey. Why the lore has this special meat called ‘lamb’, who knows? When we harvest our sheep, they are not baby lambs, they are full grown. We carefully select the ones who may not have the best horns or wool for breeding but will still provide the value of gracing our tables with the heart and tended always with love. We honor our animals and thank them for being part of our family. Our sheep are also raised for wool production, where we shave their wool once a year and make wool bedding and other home goods.

Also, it is good to note that the lamb we are referring to are not those cute little lambs you see frolicking in the winter fields. They are close to full grown and are between 8 and 12 months old. They average about 80 to 90 lbs live weight. Our lamb meat is not mutton. Mutton is a sheep that is several years old and is considered a delight in the UK.

"We just had our first lamb burger from your lamb. Delicious. Not gamey at all, but very lovely deep meaty flavor. Can’t wait to try the other offerings. Thank you!"—Steve
